ZUCCHINI WAFFLES
Serves 1
  • Ingredients:
  • • 1 1/2cup grated zucchini with skin (about 3 zucchinis)
  • • 1 egg
  • • 1/3 cup milk of your choice
  • • 1/2 cup gluten-free flour
  • • 1/2 cup grated parmesan cheese
  • • 1/4 teaspoon salt
  • • 1 tablespoon coconut oil

Instructions:

  1. Preheat Kalorik Belgium Waffle Maker.
  2. Squeeze out the extra water from the grated zucchini.
  3. In a large bowl combine the flour, egg, milk, grated parmesan and salt until it forms a batter.
  4. Stir in the grated zucchini.
  5. Brush coconut oil on the Kalorik Belgium Waffle Maker.
  6. Spoon the batter into the Kalorik Belgium Waffle Maker and bake for 3-5 minutes or until the outside is crispy.
  7. Serve hot topped with almond butter, blueberries, and raspberries.

To make healthier tortilla strips, instead of deep-frying, bake fresh tortillas, cut into thin strips, at 350º until crispy.
