SLOW COOKER VEGETARIAN SLOPPY JOES
Serves 8
  • Ingredients:
  • • 1 cup finely chopped carrots
  • • 1 cup finely chopped mushrooms
  • • 1 cup finely chopped sweet yellow onion
  • • 2 garlic cloves, minced
  • • 1 1/2 cups dried lentils
  • • 1/2 cup quinoa
  • • 8 ounces good-quality canned crushed tomatoes
  • • 1/2 cup ketchup
  • • 2 tablespoons maple syrup
  • • Dash of hot sauce
  • • 2 tablespoons Dijon mustard
  • • 1 tablespoon chili powder
  • • 1 teaspoon smoked paprika
  • • 4 cups vegetable broth
  • • Salt & freshly ground pepper

Instructions:

  1. Combine all of the ingredients in your Kalorik Slow Cooker and stir to combine. Lock the lid in place and cook on Slow Cook Mode for 3 hours.
  2. Serve warm with on a toasted bun, on a biscuit or in a spaghetti squash bowl.
