SLOW COOKER ROASTED GARLIC MASHED POTATOES
Serves 1
  • Ingredients:
  • • 5 pounds Yukon Gold potatoes, cut into 2-Inch pieces
  • • 1 cup whole milk
  • • 1 cup half & half
  • • 2 cups chicken or vegetable broth
  • • 12 peeled garlic cloves
  • • 1 stick (4 ounces) unsalted butter
  • • 1/2 cup crème fraiche
  • • Salt & freshly ground pepper

Instructions:

  1. Place the potatoes, milk, broth and garlic cloves in your slow cooker, with the garlic sitting on top. Season liberally with salt and pepper. Cover and cook for 4-5 hours on high or 7-8 hours on low. When the potatoes are very tender, add the butter and crème fraiche and mash directly in your slow cooker; the potatoes should be smashed and rustic. Taste and adjust the seasoning.

I like to leave the skins on the Yukon Gold potatoes, for flavor and texture, and because I like a rustic smashed potato. Peel the potatoes, if you like, for a creamier texture.
