PRESSURE COOKER 3-MINUTE FIG JAM
Makes about 4 Half-Pint Jars of Jam
  • Ingredients:
  • • 2 pounds fresh figs, washed and air dried
  • • 1 cup granulated sugar
  • • 1/2 cup brown sugar
  • • Zest and juice of 1 lemon
  • • 1 teaspoon vanilla paste or pure vanilla extract or 1 vanilla bean, split
  • • Small pinch of salt

Instructions:

  1. Add the olive oil to your Kalorik 6-in-1 Multi Use Pressure Cooker. Press the “Sauté” button and when the pot is hot, add the onions. Sauté, stirring often, for 3 minutes. Add the carrots and celery and continue cooking for 10 minutes more. Season the vegetables with salt and pepper. Add the garlic and cook for 2 minutes more, stirring often.
  2. Unlock the lid and remove it. (If you used a vanilla bean, scrape the seeds from the inside of the bean, add them to the pot and discard the bean.) Using your Kalorik Hand Blender, puree the jam until smooth.
  3. Spoon the hot jam into Mason Jars, seal the lids and let cool completely before storing.
