BAKED EGG IN AN AVOCADO

  • Ingredients:
  • • 2 ripe avocados
  • • 4 eggs
  • • Pico de Gallo or your Salsa of choice or hot sauce
  • • Salt & freshly ground pepper

Instructions:

  1. Cut each avocado in half and remove the pit. Shave a thin strip off the bottom of each avocado half to allow it to sit flat. Scoop out the center of each avocado just a bit, to make the whole bigger (eat the excess!). Break an egg into each avocado half, season with salt and pepper and place the avocado halves in the basket of your Air Fryer.
  2. Air Fry at 360ºF for 8 minutes.
  3. To serve, spoon Pico de Gallo or salsa over top and enjoy.
