Cashew cream is a tasty and healthy alternative to dairy cream. It is made from soaked and blended cashews, and can be used in soups, sauces, dips, and spreads. It is a nutritious choice, high in antioxidants, protein, and healthy fats.
Ingredients
1 cup raw cashews
½ cup water, plus more for soaking
2 tablespoon rice vinegar
1/2 teaspoon Dijon mustard
¼ teaspoon salt

Directions
In a resealable container soak cashew overnight. Discard water and rinse cashews
In the carafe of a blender combine water, 2/3 of the cashews, rice vinegar, Dijon, and salt. Blend on high for 2 minutes. Scrape down sides of the carafe.
Add remaining cashews and blend on high for an additional 3 minutes.
Taste and add salt if desired. Enjoy as an alternative to sour cream!

Chef's Tip:
No time to soak your cashews overnight? Cover cashews with boiling water and allow to hydrate for 30-60 minutes and follow from step 2!
