Mexican Inspired Grilled Corn

This family favorite is sure to gather a loyal following- simple grilled corn, dressed up with layers of flavor and a dash of spice this corn is sure to be a hit at every gathering!!
Ingredients
8 ears of corn, shucked
1 cup mayonnaise
2 lime, juice & zest
½ teaspoon cumin
½ teaspoon coriander
½ teaspoon cayenne (optional)
2 teaspoons granulated garlic
1 teaspoon salt
8 ounces cotija cheese, finely crumbled
2 tablespoons Tajin
1 Lime, cut into 8 wedges
1 tablespoon olive oil

Directions
Preheat the grill grate in your Air Fryer Oven Grill to 500F. Extend the time to 30 minutes. Lightly brush each ear of corn with canola oil. Grill for 8 minutes and turn the corn, repeat until the corn is fully cooked and lightly charred.
While the corn cooks, combine mayonnaise, lime juice & zest, salt, cumin, coriander, cayenne, and granulated garlic in a small bowl. Whisk until fully combined. Set Aside.
Using a plate or a shallow tray, spread crumbled cotija cheese out in an even layer
When corn is finished remove from grill and firmly insert a skewer into one side. Holding the skewer, generously coat with mayonnaise mixture using a basting brush.
Roll mayonnaise coated corn into the cotija cheese and lightly sprinkle with Tajin seasoning. Repeat with remaining corn.
Serve hot and enjoy!
Recipe Note
Can’t Find Tajin or Cotija? This recipe is just as delicious with Parmesan cheese and Cayenne Pepper or Paprika!
