This easy and flavorful Gingered Sweet Potato Soup recipe is a perfect dish for a cozy evening. The best part? It can be completely prepared using the Kalorik® 1800W High-Powered Blender with its soup mode and a pulse control that heats liquids for a smooth and creamy texture.
Ingredients
3 large sweet potatoes, peeled and diced
1 large onion, chopped
3 garlic cloves, minced
2 tbsp olive oil
4 cups vegetable broth
1 can (14 oz) coconut milk
1 tbsp grated fresh ginger

Directions
Heat the olive oil in a large saucepan over medium-high heat. Add the chopped onion and minced garlic and sauté until softened about 5 minutes.
Add the diced sweet potatoes, grated ginger, and ground cinnamon to the saucepan and stir to combine.
Pour in the vegetable broth and bring to a boil. Reduce the heat and let the mixture simmer for about 20 minutes, or until the sweet potatoes are tender.
Carefully transfer the sweet potato mixture to the Kalorik® 1800W High-Powered Blender pitcher and blend on soup mode until smooth.
Add the can of coconut milk to the pitcher and blend again in soup mode until the mixture is well combined and heated through.
Taste the soup and season with salt and pepper to your liking.
Serve the soup hot, garnished with chopped fresh cilantro.
Recipe Note
Once the sweet potato mixture is blended in the Kalorik® 1800W High-Powered Blender, it takes only a few more minutes on soup mode for the mixture to be heated through and the coconut milk to be added and blended.
