BAKED EGG in an AVOCADO
The food trend continues…we love our avocados! This is my favorite 3-ingredient breakfast, and I used to turn on the oven, wait for it to preheat, etc. But now, my air fryer makes breakfast in 8 minutes flat, with no preheating time and it’s brilliant. The egg is soft and delicious, the avocado is warm, which by the way, brings out all the flavor and creamy texture and its just downright delicious. Your morning’s made~
Ingredients
2 ripe avocados
4 eggs
Pico de Gallo or your Salsa of choice or hot sauce
Salt & freshly ground pepper
Instructions
1. Cut each avocado in half and remove the pit. Shave a thin strip off the bottom of each avocado half to allow it to sit flat. Scoop out the center of each avocado just a bit, to make the whole bigger (eat the excess!).
2. Break an egg into each avocado half, season with salt and pepper and place the avocado halves in the basket of your air fryer. Air fry at 360ºF for 8 minutes.
4. To serve, spoon Pico de Gallo or salsa over top and enjoy.
Serves 2
This sounds delicious! But,I don’t have an air fryer. To make in the oven, what temperature do I use, and for how long should I bake it?
The eggs come out raw after 8 minutes.
Just received my new air fryer. Can’t wait to try this!
