SOUTHERN BUTTERMILK BISCUITS
There might be nothing better than warm, flaky biscuits with butter and jam for breakfast...especially when you don’t have to preheat the oven! These traditional southern biscuits bake up beautifully in your air fryer.
Ingredients
4 ounces cold unsalted butter, cubed
2 cups self-rising flour
3/4 cup buttermilk
1 tablespoon heavy cream
Instructions
1. In a large mixing bowl, use a pastry cutter or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs. Add the buttermilk and mix gently, just until moistened (do not over mix!).
2. Dump the contents of the bowl onto a work surface and knead only 4 or 5 times, then pat the mixture to 3/4-inch thickness (the dough will be loose; this makes for flaky biscuits).
3. Cut biscuits using a biscuit cutter or a floured juice glass. Place the biscuits side-by-side in the basket of your air fryer; you can fill the basket with as many biscuits as will fit in a single layer). Brush the tops of the biscuits with the heavy cream.
4. Air fry at 400ºF for 10 minutes, then carefully turn the biscuits over and Air Fry at 400ºF for 3 minutes more. Serve warm.
