A Halloween treat without the guilt? Un-BOO-lievable! These not-so-scary Ghost Cupcakes are gluten-free, vegan and paleo friendly. The batter is prepared with organic cassava flour and almond flour. Cassava flour is the perfect substitute for all purpose flour because it’s a 1:1 replacement. For non-wheat flour allow your batter to hydrate for 20-30 minutes before baking. Take extra care to rotate your cupcakes while baking and use the Bake 2 shelf instead of Bake 1 of your MAXX.
The ghost cupcake’s Marshmallow frosting can be prepared with egg whites, or a vegan alternative like aquafaba or applesauce, while cane sugar can be replaced with granulated monk fruit.
